We've mentioned that pork is the favorite Chinese meat when we talked about eating pig intestines. Since then, I've had pig feet and pig snout. Just to let you know that we're not done, here's another pig body part that was served and enjoyed by all the other night at a Sichuan restaurant. (See the heavy-duty spices on the plate above the mystery meat? I tried one and it was HOT!) |

Hint: This is not sliced. It is full thckness but cut into bite-sized pieces for handling with chopsticks. You might even breathe a sigh of relief when you realize that this isn't as outrageous as it could have been. |
